Makes 12 muffins
Prep time: 20 minutes
Bake time: 20 minutes
Ingredients:
1 1/2 cup Wheat Bran
1/2 cup boiling water
1/4 cup melted butter
3/4 cup sugar
1 egg beaten
1 cup buttermilk
1 1/4 tsp baking soda
2/3 cup all purpose flour
2/3 cup whole wheat flour
1/2 tsp salt
Directions:
Preheat oven to 425Â F
Mix wheat bran, boiling water and butter. Set aside to cool
Mix the sugar, egg and 2/3 of the buttermilk
Mix the baking soda with the rest of the buttermilk and at it to the wheat bran mixture
Mix the salt, all purpose flour and the whole wheat flour
Add everything to the bran mixture
Fill muffin tins 2/3 full and bake for 20 minutes on the middle rack
