Breakfast Frittata

Ingredients

4 slices Bacon
1/2 cup tomatoes
4 large mushrooms slices
8 medium eggs beaten
1 bag baby spinach (about 9oz) roughly chopped
1/4 tsp salt

Directions:

Preheat the oven to 500F.
Fry the bacon, mushrooms and tomatoes until the bacon is cooked.
Add the spinach, cover and let it wilt for about a minute.
Add salt to the eggs, pour over the vegetables and fold into the mixture with a rubber spatula.
Cook for about 3-4 minutes without stirring so the eggs can set on the bottom and sides of the pan.
Transfer to the oven and cook for an additional 3-5 minutes (until the top is golden brown and the eggs are solid)

Cut into slices and either serve immediately or refrigerate for easy a quick and easy pre-made breakfast option.
